What a strong start to the year! Savage has updated their menu since last year — amazing work by Andrea and the team.

Before going, I’d heard mixed reviews about Savage. To be honest, we changed our reservation last minute from the small menu to the full experience. I told myself, why not? It’s a new year — might as well kick it off in style!

Siri, whom I had spoken to beforehand, greeted us at the main entrance. It was a great opportunity to meet more people from the industry. She asked if we’d like to start with a glass of champagne — of course we said yes. 🥂

We loved the snacks and the beautiful presentation. The wagyu was easily my favorite. After the snack course, we were invited into the main dining room.

There was a new sommelier that evening — very talented and charismatic. We asked about the wine pairing, and I loved that they served one wine per dish. That level of detail really elevates the experience.

As for the mains, I had already tried the reindeer at the Grezzo pop-up, and it was still my favorite here. So tender! You even get to choose your own knife, which adds a nice personal touch.

Other standout dishes included the Norwegian crayfish and the cold hamachi — both beautifully presented and full of flavor.

The presentation style reminded me a bit of Maaemo, which makes sense. Many of Norway’s top chefs have trained there and now bring their own creative takes.

All in all, this is one of the better Michelin-starred restaurants in Oslo. Truly well deserved. Andrea runs a kitchen that feels professional yet welcoming, and the whole experience is memorable.

One thing I really love is how they plate and present the dishes at a central station right in front of the guests — you get to watch the chefs in action. Such a smart, engaging detail.
